Serves 6
½ cup homemade or good quality store-bought mayonnaise1 clove garlic, minced1 tablespoon lemon juice1 ½ teaspoons wasabi pasteSalt and freshly ground black pepper6 excellent quality rolls, halved6 yellowtail tuna fillets, about 4 ounces each, about 1 ½ pounds2 tablespoons extra virgin olive oilPea shoots, sliced tomatoes and sliced red onions as a garnish (optional)
Place the mayonnaise, garlic, lemon juice and wasabi in a bowl. Mix well and season with salt and pepper. Preheat an outdoor grill. Set the grate 4-inches from the heat source.
Grill the rolls and set aside.
Brush the tuna with olive oil and season with salt and pepper. Grill the tuna until golden on one side, 2 to 3 minutes. Turn the turn and continue to grill on the second side until golden and rare to medium rare, 2 to 3 additional minutes.
Place the tuna on the rolls topping with a big dollop of wasabi mayonnaise. Serve immediately.
