Makes approximately 1 pound of pasta.
1 2/3 cups OO flour1/3 cup buckwheat flour1/4 teaspoon salt2 whole eggs4 tablespoons waterAdditional flour for dusting
In the bowl to the food processor, pulse the OO flour, buckwheat flour and salt together. Add the eggs and water and process until the dough looks like it could almost hold together but it doesn’t. It shouldn’t be sticky. If the dough is sticky, add more flour, a tablespoon at a time, until it isn't sticky. If the dough is dry and doesn’t hold together, add additional water, a teaspoon at a time. Remove the dough and gather it into a ball.
Wrap the dough in plastic and let the dough rest for at least 30 minutes. If it rests longer, place it in the refrigerator.
